Basanti Pulao Recipe | Bengali Sweet Yellow Rice
Ingredients :
2 Cups Basmati Rice
6tbsp Ghee
Whole Spices :
6 Green Cardamoms
2 Bay Leaves
1 Star Anise
2 Cinnamon
1/4 Cup Cashewnuts
1/4 Cup Raisins
3.5 Cups Water
Salt as per taste
1/4 Cup Sugar
1/2tsp Yellow Food Color or Turmeric Powder
1/2 Cup Green Peas
Method :
1. Wash rice 3 - 4 times. Soak for 20 mins.
2. Heat ghee in a vessel. Add whole spices and saute for few seconds.
3. Add cashewnuts and raisins. Fry till the raisins puff.
4. Add soaked rice, saute for 2 - 3 mins.
5. Add water, salt, sugar, turmeric powder or yellow food color and green peas. Mix well. Bring to a boil.
6. Lower the flame. Cover & cook till water is absorbed and rice is completely cooked.
7. Turn off flame and let it rest for 15 mins before serving.
