Bhuna Besan (Secret Ingredient Used in Restaurants for Tandoori Marinations)
Ingredients:
100ml Oil
2 Bay Leaves, 3 Cloves, 1 Black Cardamom, 1 Star Anise, 2 Green Cardamoms
1tbsp Garlic (chopped)
100g Besan (Chickpea Flour)
Method:
1. Heat Oil in a pan.
2. Add whole spices & finely chopped garlic. Saute garlic till light golden brown.
3. Add besan ka atta and bhuno on low flame for 8 mins or till you get a nice aroma.
4. Cool it & refrigerate in airtight container.
5. Use a 1tsp of bhuna besan in yout tandoori marinations (chicken tikka, tandoori chicken, reshami tikka etc)
