Biryani Masala
Ingredients :
2.5tbsp Coriander Seeds
1tbsp Cumin Seeds
1tbsp Fennel Seeds
1tbsp Black Cumin Seeds (Shahi Jeera)
1/2tbsp Black Pepper Corns
12 Cloves
2 Black Cardamoms
15 Green Cardamoms
2 Star Anise
1 Nutmeg
1 & 1/2 Mace (Javitri)
3 Cinnamon Sticks
7 Dried Red Chillies
1tbsp Anardana (Pomegranate Seeds)
1/2tbsp Dried Rose Petals
4 Bay Leaves
1tbsp K. Red Chilli Powder
1tbsp Garlic Powder
1/2tbsp Turmeric Powder
1/2tbsp Ginger Powder

Method :
1. Remove the whole spices in a bowl.
2. Heat a kadhai. Add whole spices in the kadhai and dry roast on low flame for 5 mins.
3. Grind to a fine powder.
4. Remove in a bowl. Add kashmiri red chilli powder, garlic powder, turmeric powder and ginger powder. Mix Well.
5. Store in air tight glass container.
