Dhaba Style Kadhai Paneer 🧀🧅🫑

Ingredients - Secret Spice Mix :
1tsp Cumin Seeds
1tsp Coriander Seeds
15 Black Pepper Corns
2 Red Chillies

Method :
1. Dry Roast for 1 - 2 mins and grind to a coarse powder.

Ingredients - Gravy Base
2tbsp Oil
3 Tomatoes
10 Garlic Cloves
1 inch Ginger
2 Green Chillies
Few Coriander Stems
1tsp Salt
10 - 12 Soaked Cashewnuts
1tsp Degi Mirch

Method :
1. Heat oil in a pan. Add chopped tomatoes, garlic, ginger, green chillies and coriander stems. Cook for 1 - 2 mins.
2. Add salt, soaked cashewnuts, degi mirch and mix well. Cover & cook till tomatoes are soft.
3. Cool and transfer to a blender along with 1/4 cup water. Grind to a fine paste.

Ingredients - Final dish
2tbsp Oil
1 Dried Red Chilli
1tsp Cumin Seeds
1tsp Crushed Coriander Seeds
1tbsp Garlic (finely chopped)
2 Onions
1/2tsp Turmeric Powder
1/2tsp K. Red Chilli Powder
1 Cup Water
1/2tsp Salt
1tsp Sugar
1 Onion
1 Capsicum
200g Paneer
1/2tsp Kasuri Methi
1 - 2tbsp Fresh Cream
Chopped Coriander
Julienned Ginger

Method :
1. Heat Oil in a pan. Add dried chilly, cumin seeds and crushed coriander seeds. Saute for few seconds.
2. Add finely chopped garlic. Cook till garlic turns light golden brown.
3. Add finely chopped onions. Cook till light golden brown.
4. Add turmeric and red chilli powder. Mix well.
5. Add ground paste. Cook till it dries.
6. Add water and cook till gravy thickens. Bring to a boil.
7. Add salt, sugar and mix well.
8. Add onion, capsicum, paneer, prepared spice mix, crushed kasuri methi and mix well. Cook for 2 mins.
9. Garnish with fresh cream, chopped coriander & julienned ginger.
