Dubai's Viral Paratha Burger

Ingredients - Dough:
100ml Milk
1/2 - 3/4 cup Water
1tsp Salt
1tsp Sugar
1 Egg
1tbsp Oil
500g Flour
1/2tsp Baking Powder

Layering Fat :
1/4 Cup Ghee
1/2 Cup Oil

Burger Sauce
1/2 cup Mayo
1tbsp Mustard Paste
1tbsp Sriracha Sauce
2 - 3tbsp Tomato Sauce
1/2tbsp Pickle Juice
1tbsp Pickled Gherkins
1tbsp Pickled Jalapenos

Caramelised Onion
2tbsp Oil
1tbsp Butter
3 Onions (sliced)
1/2tsp Salt
2tbsp Brown Sugar
1tbsp White Vinegar
1/2tsp Dark Soy Sauce
2tbsp Tamarind juice
1/2tsp Pepper Powder
1tsp Chilli Flakes

1kg Beef Mince (divided into 70g balls)

Method :
1. Take milk, water, salt, sugar, egg and oil in a bowl. Mix well.
2. Mix flour and baking powder. Add the wet mixture to it and bring the flour together to form a hard dough. Cover with a damp cloth and let it rest for 10 mins.
3. Knead for 10 mins and cover again for 10 mins.
4. Divide the dough into 100g balls.
5. Oil the balls and cover and let it rest for 1 hour.
6. Apply oil on surface and spread the dough using your palm or a rolling pin. Roll it our as thin as you can.
7. To make layering fat, mix ghee and oil
8. Drizzle the layering fat and spread it.
9. Catch one end in pleats and incorporate air by raising it up and down.
10. Roll it as shown and tuck the end at the bottom.
11. Let it rest for 10 mins.
12. You can press it and cook it or you can cook it as it is.
13. Take oil in a pan. Place parathas on it. Drizzle oil and cover and cook on low flame for 5 mins
14. Flip it and drizzle oil and cover again and cook on low flame for 5 mins.
15. Cook the sides.
16. Smash them to open the layers.
17. To prepare burger sauce, mix mayo with mustard paste, sriracha sauce, tomato sauce, pickle juice, chopped pickled gherkins and jalapenos.
18. To prepare caramelised onions, heat oil and butter. Add sliced onions and cook till onions turn soft. Add salt, brown sugar. Mix well. Cook till sugar dissolves. Add vinegar, dark soya sauce, tamarind juice, pepper and chilli flakes. Mix and cook till juices dry.
19. Place 70g Mince balls and smash with a smasher to flatten the burger patty. Season witj salt and pepper. Cook on both sides and place a cheese slice and cook till it melts.
19. Cut open the paratha. Drizzle burger sauce, place burger patty, caramelised onions, plain mayo. Close the paratha burget and enjoy.
