Tamarind Chutney Recipe | Sweet & Tangy Imli Chutney for Chaat

Ingredients:
100g Tamarind
1 Cup Water
260g Jaggery
300g Sugar
1tsp Oil
1tsp Cumin Seeds
1/4tsp Hing
1tsp Red Chilli powder
1/2tsp Cumin Powder
1/2tsp Garam Masala
1/2tsp Kala Namak
1/2tsp Saunf Powder
1/4tsp Ginger Powder
1/4tsp Black Pepper Powder
1/4tsp Salt
1tbsp Melon Seeds

Method:
1. Soak tamarind in water for 1 hr.
2. Grind tamarind to fine paste and strain it to get a smooth pulp.
3. Heat oil in a pan, add cumin seeds and hing. Saute for a few seconds.
4. Add tamarind pulp, jaggery and sugar and cook till jaggery and sugar dissolves completely. Bring to a Boil.
5. Add all mentioned spices and mix well.
6. Let it come to a boil.
7. Finish off with melon seeds, mix well and turn off flame.
