Ingredients for Kolkata Biryani Masala:
Green Cardamom- 20 nos
Cloves- 1 tsp
Cinnamon- 3
Mace (Javitri)- 3 nos
Nutmeg (Jaiphal)- 1/2
Black Peppercorns- 1 tsp
White Peppercorns- 1 tsp
Black Cardamom- 4 nos
Shahjeera- 1 tsp
Coriander Seeds- 1 tbsp
Process:
To make the Kolkata Biryani Masala, add all the items to a pan and dry roast them for 3 - 4 mins on low heat. Remove to a plate, cool it completely and then grind it to a powder.
It can be stored in an air tight container and used for up to 6 months.
