About This Recipe

Malai Seekh Paratha is a flaky, crispy flatbread stuffed with creamy spiced minced meat filling. The malai (fresh cream) blended into the seekh-style mince keeps the filling rich, juicy, and melt-in-your-mouth, while the paratha is golden and crisp on the outside. Served with mint chutney and raita.

Recipe

Malai Seekh Paratha

Ingredients - Kebab
300g Chicken Thighs
1 Small Onion
4 Garlic Cloves
1 inch Ginger
3 Green Chillies
Little Coriander Leaves
2tbsp Onion (finely cut and juices squeezed out)
1tsp Salt as per Taste
1/2tsp Cumin Powder
1/4tsp Garam Masala
1/4tsp Cardamom Powder
1tsp Shan Seekh Kebab Masala
1 Egg White

Paratha :
250g All Purpose Flour
25g Roasted Semolina
1tsp Salt
2tbsp Curd
Water as req.

Malai Sauce :
1tbsp Butter
1tbsp Garlic
1/2 Cup Fresh Cream
1/2 Cup Milk
1/2tsp Cumin Powder
1/2tsp Chaat Masala
1/2tsp Cardamom Powder
1/2tsp Sugar
2tbsp Coriander

Method:
1. Chop onion and squeeze the juice from it.
2. Add to a food processor chicken thighs, garlic, ginger, green chillies, salt, garam masala, cumin powder, cardamom powder, shan kebab masala and egg white. Make fine paste. Refrigerate for 1 hour.
3. Give charcoal smoke for 1 minute.
3. Wet your hands and make seekh kebabs.
4. Cook seekh kebabs on direct flame for 1 - 2 mins till char marks are visible.
5. Remove from seekh.
6. Heat some oil in a pan. Add kebabs and fry them on low medium flame for 7 - 8 mins or till chicken is cooked well.
7. Prepare the dough by mixing flour, semolina, salt, curd and water. Let it rest for 15 mins.
8. Divide dough and apply oil. Let it rest for 10 mins.
9. Roll out small size poori /parathas.
10. You can deep fry or shallow fry.
11. To prepare sauce, add butter to pan. Add garlic and saute till light golden brown.
12. Add fresh cream and milk, spices and sugar and coriander. Mix well. Bring to a boil.
13. Place kebab on paratha/ poori. Drizzle sauce and put some onions rings on it.
14. Roll it and tight and enjoy. Use remaining sauce as a dip.
