Jeera Rice

Ingredients :
1 Cup Basmati Rice
2tbsp Oil
1 Bay Leaf
1 Star Anise
3 Cloves
3 Green Cardamoms
1/2tbsp Cumin Seeds
1 & 3/4 Cup Water
1tsp Salt or as per taste
Juice of Half Lemon
Chopped Coriander
1/2tbsp Ghee (optional)

Method :
1. Wash basmati rice 3 - 4 times and soak for 30 mins.
2. Heat oil in a pan. Add whole spices and cumin seeds. Allow the cumin seeds to crackle.
3. Add soaked basmati rice and saute for few seconds.
4. Add water and mix well.
5. Add salt as per taste and lemon juice. Mix well. Bring to a boil
6. Cover and cook for 10 mins on low flame.
7. After the water is absorbed, cover the lid wuth cloth and cook on dum for 1 - 2 mins. Turn off flame and let it rest for 10 mins.
8. Garnish with chopped coriander and drizzle ghee.
9. Open the rice gently with a fork and serve.
