Rich Fruit Cake

Ingredients - Soak the Dry Fruits:
1/2 Cup Orange Juice
2tbsp Castor Sugar
2tbsp Brown Raisins
2tbsp Black Raisins
2tbsp Tutti Frutti
2tbsp Cranberries
3tbsp Chopped Cashewnuts
3tbsp Chopped Almonds
2tbsp Chopped Walnuts

Method :
1. Add castor sugar to orange juice. Mix till it dissolves.
2. Add above mentioned fruits & nuts. Mix Well.
3. Soak for 2 hours.

Ingredients : Caremelise the Sugar
1/2 Cup Sugar
1/4 Cup Water

Method :
1. Add sugar to a pan. Keep flame on medium to high. Do not stir.
2. Once you see the sugar has melted slightly start stirring and continue till sugar is completely dissolved.
3. Add 1/4 cup water little by little and mix well.
4. Add it in 3 batches. Once you add the last batch, mix well and bring to a boil.
5. Let it cool completely.

Ingredients - Spice Mix :
1 - 2 Cinnamon Sticks
4 Green Cardamoms
4 Cloves
4 Black Pepper Corns
1/4 pc of Nutmeg
1/4tsp Ginger Powder
1tsp Sugar

Method :
1. Grind above ingredients to a fine powder.

Ingredients - Cake Batter
1/4 Cup Melted Butter
1/2tsp Orange Zest
1tsp Vanilla Essence
1 Cup All Purpose Flour
3tbsp Milk Powder
2tbsp Milk or Water
1tsp Baking Powder
1/4tsp Baking Soda
1/2tsp White Vinegar
Dry Fruits and Nuts to Decorate the top

Method :
1. Transfer cooled caramel to a bowl. Add melted butter, orange zest and vanilla essence. Mix Well.
2. Sieve flour, milk powder and spice mix in the wet mixture.
3. Add soaked nuts and mix well using cut and fold method.
4. Add 2tbsp milk or water of mixture is dry.
5. If cooking in oven, preheat oven for 10 mins at 180° C.
6. If cooking in cooker, spread salt at the bottom of cooker and place a stand on it. Cover with lid and remove the whistle. Preheat on low flame for 10 mins.
7. Add baking powder, baking soda and white vinegar. Mix well using cut and fold method. Always mix in one direction.
8. Grease and line a 6 inch or a 7 inch tray.
9. Pour the cake batter and bake in cooker for 50 mins.
10. Or bake in oven for 40 mins.
11. Once baked, remove and cover with a cloth.
12. Unmould cake when it comes to room temperature.
13. Cut and Enjoy !!!
