Rose & Pista Kaju Katli
Ingredients :
250g Cashewnuts
1 cup Sugar
1/3 cup Water
3tbsp Milk Powder
1tbsp Rose Water
Few drops of Pink Color
1tbsp Dried Rose Petals
1/4 cup Blanched & Chopped Pistachios
Method :
1. Grind cashewnuts to a fine powder and sieve.
2. In a pan, add sugar and water. Cook till it dissolves. Keep stirring & cooking till it reaches 1 string consistency.
3. Turn off flame and add milk powder, rose water and ground cashewnuts. Mix well.
4. Add few drops and mix till you get a nice baby pink color.
5. Turn on the flame and cook in low flame stirring continuously for 3 - mins till it starts to leaves the sides of the pan.
6. Pour mixture on a parchment paper and let it cool for 5 mins.
7. Add rose petals and mix. Fold the mixture using the parchment paper till you get a smooth round ball.
8. Roll it out. Sprinkle chopped pistas.
9. Cut into diamond shapes and enjoy.
