Guava Cheese
Ingredients :
400g Guava Pulp
400g Sugar
1.5tbsp Ghee
Juicr of Half Lemon
A pinch of Food Color mixed with 1tbsp Water
Method :
1. Peel the guava skin & knock of the top & the bottom.
2. Cut into halves and scoop out the seeds.
3. Cut into small pieces.
4. Steam in double boiler for 10 mins.
5. Cool & grind to a paste.
6. Strain the puree.
7. Weigh it and take equal measure of guava pulp and sugar. You can weigh it using kitchen scale or measuring cups.
8. Grease tray with ghee.
9. Transfer guava pulp and sugar to a pan.
10. Turn on flame and cook on high heat till sugar dissolves completely and it starts boiling.
11. Now add 1tbsp ghee and stir continuously on low flame till it becomes thick.
12. Once it is thick, add juice of half lemon and 1/2tbsp Ghee.
13. Continue stirring on low flame till it reduces and becomes more thick.
14. Add food color mixed with water. Mix well.
15. Continue stirring on low to medium flame till it leaves the sides of the pan.
16. Transfer mixture to greased tray. Spread with spatula. Grease your palms with ghee and smoothen the surface.
17. Allow it to set for 6 - 7 hours at room temp.
18. Unmould and cut into squares or diamonds.
19. Allow it to dry for at least 12 hours. Store and refrigerate.
