Tam Tam Aloo
Ingredients :
500g Baby Potatoes
1tsp Salt
Water to boil
Spice Mix :
2 Red Chillies
1tsp Coriander Seeds
1tsp Fennel Seeds
1/2tsp Black Pepper Corns
1/2 Cup Tamarind Pulp
1tsp Salt or as per taste
1/2tsp Red Chilli Powder
1/2tsp Chilli Flakes
1/2tsp Cumin Powder
1tsp Chaat Masala
1/4tsp Turmeric Powder
1tsp Coriander Powder
1tbsp Sugar or as per taste
A Pinch of Orange Red Food Color
Oil to Deep Fry Potatoes
2tbsp Oil
1tsp Cumin Seeds
1/4tsp Asafoetida
8 - 10 Curry Leaves
1tbsp Grated Garlic
2 - 3tbsp Water
Chopped Coriander for Garnish
Method :
1. Add salt to water and boil potatoes for 5 - 7 mins. Peel off the skin and deep fry till light golden brown.
2. Dry roast chillies, coriander seeds, pepper corns and fennel seeds. Grind to a coarse powder.
3. Add salt, sugar, red chilli powder, coriander powder, cumin powder, turmeric powder, chilli flakes and chaat masala and orange red food color to tamarind pulp. Mix well.
4. Heat oil in a pan. Add cumin seeds, asafoetida, curry leaves and grated garlic. Saute for a few seconds.
5. Add tamarind mixture and ground spice mix. Mix well.
6. Add 2 - 3tbsp water and bring to a boil.
7. Add fried potatoes and mix well.
8. Garnish with chopped coriander and nylon sev.
