White Chicken Biryani 🐔🌿
Ingredients - Biryani Masala :
1/2tbsp Fennel Seeds
1/2tbsp Coriander Seeds
4 - 5 Green Cardamoms
Quarter Pc Of Nutmeg
Half Mace

Method :
1. Grind above ingredients to a fine powder.

Ingredients - Chicken Marination :
500g Chicken
1tsp Salt
1.5tbsp Ginger Garlic Paste
1/2 Cup Curd
1/2tsp Garam Masala
1/2tsp Chaat Masala
5 - 6 Green Chilli Paste
Prepared ground spice mix

Method :
1. Add above ingredients to chicken. Mix Well & Marinate for 30 mins.

Ingredients for Preparing Biryani Gravy :
1/2 Cup Oil
Whole Spices :
1 Black Cardamom
1 Cinnamon Stick
3 - 4 Cloves
3 Green Cardamoms
2 Bay Leaves
1/2tsp Cumin Seeds
1/2tsp Black Cumin (Shahi Jeera)
1/2tsp Black Pepper Corns
1 Onion
1/2tsp Chicken Powder

Method :
1. Heat oil in a vessel. Add whole spices. Saute for few seconds.
2. Add onion and cook till onions turn light golden brown.
3. Add marinated chicken and mix well.
4. Add chicken powder. Mix well & cook on high flame for 3 - 4 mins till chicken changes color.
5. Now cover and cook on low flame for 8 - 10 mins.

Ingredients - Preparing the Rice :
400g Basmati Rice
2 Litres Water
Whole Spices :
1 tsp Shahi Jeera
2 Bay Leaves
1 Cinnamon
2 Green Cardamoms
1.5tbsp Salt
1tbsp Oil
Juice of Half Lemon

Method :
1. Wash rice 3 - 4 times till water is clear. Soak for 30 mins.
2. Add whole spices, salt, oil, lemon juice to water. Bring to a boil.
3. Add soaked rice. Cook till 70%.
4. Strain rice & set aside. Reserve 1/4 Cup rice Water for later use.

Ingredients - Assembling the Biryani :
Chopped Coriander
Few Mint Leaves
2 - 3 Chillies
Birista
1/4 Cup Rice Water
1tbsp Kewra Water
1 - 2tbsp Ghee

Method :
1. Add the rice on top of chicken gravy. Spread it.
2. Sprinkle some chopped coriander, mint leaves, chopped chillies, birista on the rice.
3. Add rice water, kewra water, ghee.
4. Place vessel on on tawa.
5. Cover vessel and place something heavy on it.
6. Cook on high heat for 2 - 3 min then lower the heat and cook for 15 mins.
7. Turn off the flame & let it rest for another 15 mins before serving.
8. Enjoy with raita.
